Produced by Diego Samuel Bermúdez at Finca El Paraíso, Geisha Luna is a remarkable example of precision fermentation. Exceptionally ripe coffee cherries undergo an initial 12-hour fermentation before being depulped and immersed in a liquid coffee-pulp extract for a further 48 hours. The process is completed with thermal shock treatment and carefully controlled dehumidification drying.
This innovative approach creates a layered sensory experience, combining juicy grape and cherry notes with gentle chocolate sweetness, brilliant citrus acidity and a silky mouthfeel.
Named after Diego’s daughter, Luna represents the family’s dedication to pushing the boundaries of coffee processing while preserving the elegance and complexity of the Geisha variety.
